Holiday cooking tips with Rachael Ray

NEW YORK, N.Y. - November 24, 2010

Easy peasy, holiday entertaining Rachael Ray style. Check out her delish 5-minute party dish.

"Anybody can do this. It is not just for special skilled people or rich people," says Rachael. "There was a great little trick that I actually showed Oprah."

If it's good enough for Oprah, then we will take it!

"It's an instant Torta," said Rachael.

Here's what you need to make her low-cost version of the pricy gourmet store specialty: a few sundried tomatoes, some homemade or store-bought pesto, boursin cheese, the little garlic and herb cheese, and a small glass bowl lined with plastic wrap. You can get it all at any supermarket across America.

"Take a few sundried tomatoes and arrange them sort of like a flower pattern on the bottom. Then slather on the sauce.

"Don't be afraid to pour a little more pesto in there and let it ooze up the sides. Then add the cheese and voila," said Rachael. "When you go to serve it, lift up the plastic wrap, put a plate on top of the bowl upside down, and then flip it over and pull off the bowl."

Pull off the plastic, and you have an adorable little fancy fakeout. Add it to a platter of store-bought meats, cheeses and other spreads and your holiday will look a lot like the Ray celebration.

We make apple celery and onion stuffing. We make two small birds instead of one big one. It is much easier handing two small birds. Plus everyone can sleep a lot later," said Rachael.

That's always something to be thankful for, right?
