Turning simple dishes into something special

A Center City chef is out to change the way you think about that. Bryan Sikora runs a a.kitchen, the house restaurant attached to the AKA Hotel off Rittenhouse Square.

The dining room is relatively small, but Sikora's creativity is strictly high-energy. He's always looking for ways to elevate seemingly-simple dishes into something special.

At breakfast, the restaurant has the eggs and griddle dishes you expect. But the meats are strictly first-rate.

Scrapple, for example, is house-made using duck, not pork. It's a flavor experience no one else offers.

Sikora enjoys taking classic ingredients and building them into unique creations.

He thin-slices a bagel, toasts the slices crisp, and builds them into a napoleon featuring salmon and crème fraiche.

He house-makes his own English muffins, available just toasted or built into Eggs Benedict.

There are similarly-creative selections at lunch and dinner.

There is also a full-service bar.
