"BURGAMO BURGER WITH HOMEMADE CHIPS"
SERVES 4

6 4oz puck style patties 80/20 grind
4 slicers your favorite cheddar
1 cup shredded iceberg lettuce
12 slices spicy pickles
¼ cup Brunoise yellow onion
8T special sauce
4 potato roll cut each one into 1/3

SPECIAL SAUCE
½ cup Hellman's mayo
¼ cup minced spicy pickles
½ cup hot sauce
3 scallions
½ teaspoon lemon juice

Slice the scallions into rounds and then mix everything together and season with salt and pepper to taste

BURGER
1. Brush the bun with butter and toast on a griddle
2. Place the burger on the griddle and press down to flatten
3. Cook 3-4 minutes and flip
4. Put a slice of cheese only on 4 of the burgers and cook just till cheese is melted
5. Place a bun down and a plain burger on top
6. Top with the sauce, onion and lettuce
7. Top with another bun and the burger with the cheese
8. Put more lettuce, onion, pickled and sauce
9. Cover with the top bun and serve with the chips

HOMEMADE CHIPS
2 ea Idaho potatoes
1. Slice 1/16in thick
2. Boil 2 qts qater with 2tablesppon salt and 2tablespoon white vinegar
3. Add the sliced potatoes for 90 seconds and remove
4. When cool and dry fry at 325f till golden brown
5. Remove and drain
6. Toss with salt and vinegar powder for salt n vinegar chips (2 tablespoons vinegar powder and 2 tablespoons salt)
