Border Springs Farm lamb at Reading Terminal Market

PHILADELPHIA - July 16, 2013

The farm in downstate Virginia has no shortage of fans among chefs from South Carolina to Washington, D.C. When the owner wanted to broaden his market, he visited chef friends in Philadelphia. They pointed him to Reading Terminal Market and he realized the historic food center was the right destination for his products.

Aaron Gottesman, whose background is in restaurants, was brought in to manage the stall. It features everything from fresh-cut meats to cooked meals...available to dine in or take home.

Gottesman says the farm's lamb is a premium product bred for maximum flavor. Lamb shows up in many of the world's great cuisines but commands respect. It needs subtle seasoning to preserve its unique taste, and must not be overcooked.

The stall at Reading Terminal Market features roasts, kebabs, and all sorts of chops. One signature cut is a double chop, cut from both sides of the bone for extra width, as opposed to thickness.

The business has only been open a few weeks but celebrities and other foodies have begun placing custom orders. Adjacent to the meat case is a lunch counter where the menu of prepared foods changes seasonally. There's a house sauce blended to marry perfectly with cooked lamb. Even dishes you'd regard as spicy still respect lamb's delicate flavor, and let it "star".
