Our wellness expert Jessica has three benefits and a recipe to get you to eat more peaches this summer. (WPVI)

Eat Your Way to Wellness founder Jessica DeLuise is back with three reasons you should be eating peaches this summer, along with a recipe for a healthy peach-filled appetizer.

JESSICA'S PEACH AND GOAT CHEESE APP
  • 4 halved peaches, pitted
  • 4 oz of organic goat cheese - plain or herbed
  • 4 tablespoons balsamic vinegar
  • 4 tbsp chopped almonds
  • 2 tbsp coconut oil

DIRECTIONS
Melt coconut oil over low heat in a sauté pan. Raise heat to medium. Place peaches face down in oil and sear for 3-4 minutes until golden brown. Cook on the back side for 2-3 minutes. Lay out on a platter. Top each peace with 1/2 oz goat cheese on each half. Top with almonds and balsamic vinegar. Serve at room temperature.
