Four Seasons Thanksgiving Recipes

Chef Joe Drago's Turkey Stuffing (yields for 12 people)
Ingredients:
1 pound onions - diced into small pieces
1 pound celery - diced into small pieces
10 cloves of garlic - chopped
1 pound Cremini mushroom - sliced and sautéed in butter
1 pound ground turkey
1oz. thyme - chopped
Half bunch of parsley - chopped
2 pounds of artesian bread - diced into large pieces
1 quart turkey stock
Salt and Pepper to taste
6 oz. butter
6 eggs

Method:

  • Preheat oven to 350 degrees.
  • Sautee ground turkey meat in a small pad of butter until cooked, season well. Remove from pan.
  • Sautee onions, celery and garlic in a small pad of butter until translucent. Add thyme, mushrooms and cooked ground turkey.
  • Cover with turkey stock and simmer for 20 minutes.
  • Strain out liquid and save all solids. Re-season solids, using salt and pepper to taste.
  • To liquefy, whisk in 4 oz. of butter to make turkey nage. Adjust seasoning to taste.
  • To mix stuffing, add reserves solids to diced bread, then moisten with turkey nage (bread should be moist enough that when you squeeze, juice will come out).
  • Add beaten eggs and chopped parsley.
  • Place in casserole dish bake 30 minutes covered; uncover and bake for 15 minutes to brown.

    Cinnamon-Sugar Rim

    1/2 Bottle Aged Rum
    1 Quart Apple Cider
    1 Pint Cranberry Juice
    3/4 Cup Simple Syrup
    5 Cinnamon Sticks
