Thanksgiving Day meals for vegans

For vegetarians or vegans, Thanksgiving can be a little tough if they're not making the meal. So the owners of three popular vegan restaurants in Philadelphia are lending some support.

Rich Landau and Kate Jacoby are husband and wife chefs and co-owners of Vedge. They have created the menu and recipes for a vegan Thanksgiving Day meal for two.

The meal is available at select Whole Foods Markets. Kate says they wanted to make it easy, special and have something for everyone.

"If you make it delicious and eliminate anything that might be a trigger, everyone will be happy," said Kate.

The center piece is a whole, roasted Dijon mustard-glazed cauliflower.

"It's got herbs and mustard and we bake it and it gets brown and bubbly," added Rich.

And it'll be surrounded by colorful side dishes, rainbow carrots with sauerkraut vinaigrette.

And of course mashed potatoes, but with a twist.

"So we've just taken mashed potatoes, vegan mashed potatoes and whipped in pureed rutabaga and a bit of miso and nutritional yeast, just in the background to give them this cheesiness," said Rich.

And you can't forget the stuffing.

"You don't have to re-invent stuffing you just have to add interesting things to it and that's what we did with black lentils and exotic mushrooms," said Rich.

The number of Americans who are vegetarian or vegan is growing. Kate says many people are more open-minded and interested in the health benefits of plant-based eating.

"A plant-based diet is pretty clean and has no cholesterol and is lower in saturated fat so for a lot of heart health reasons people are turning to this," Kate said.
