Bistro Menil's Top Secret Turkey Brine

• 1 quart water
• 2/3 cup kosher salt
• 1/2 cup brown sugar
• 1 Tablespoon 5 peppercorn (whole)
• 1 bay leaf
• 1 sprig rosemary
• 1 sprig thyme
• 1 clove
• ice

1. Combine all ingredients in a 1/2 gallon microwavable container and microwave (about 2 minutes) until salt and sugar are dissolved.
2. Add enough ice to fill to 1/2 gallon mark.
3. Once ice melts, brine can be used immediately.
