Growing season is underway at the Mainland Inn in Harleysville, Pennsylvania.

HARLEYSVILLE, Pa. -- Growing season is underway at the Mainland Inn in Harleysville, Pennsylvania.

Seedling was planted in January and everything from broccoli to kale is on the rise.

"Here we have shrivel which is used as garnish on a lot of the dishes," said Head Chef, Ezra Duker.

Duker relies on the growth in the fields to fill his menu.

It's all about health and keeping it so fresh and kind of hyper-local.

Duker says, "Not only do we have our own farm that produces the majority of our food, we also have a one acre garden right on property so we get to harvest our lettuces right before the dinner service."

The wait staff is often out in the garden picking everything and then throwing on some clothes and serving food.

The freshness adds to the health of each dish.

"You're eating living foods, it tastes better and it's healthier and the nutrient content is better," said Duker.

The Inn is an extension of the Quarry Hill Farm, just over a mile away.

They provide many of the vegetables and humanely raised animals that the chef uses in the kitchen.

"I have an opportunity here to reconnect the diner, the guest with their local farmers and it is really a wonderful thing," said Duker.
