Main Line Health double-duty recipes help people on the go eat healthy

KING OF PRUSSIA (WPVI) -- Adults of the age where they are raising children, as well as taking care of aging parents, are the so-called 'sandwich generation'. They also tend to be at a busy point in their own careers, so life can be so non-stop that there's not time to make healthy meals. If they get a serious diagnosis on top of all that, challenges can seem insurmountable.

Main Line Health shares two recipes that can save time in the kitchen - a valuable need for any parent in that age group, or anyone on the go. See how the recipes come together to make one healthy meal into two. The Teaching Kitchen at Main Line Health in King of Prussia offers a variety of virtual and in-person nutrition programs, with in-person events that include food demonstrations.

Salad with Quinoa, Chicken, & Fresh Berries
Ingredients:
3 cups mixed greens or spinach
2/3 cup chopped cooked chicken breast
cup fresh bluberries or sliced strawberries
ounce crumbled feta cheese
2 tablespoons slivered almonds
2 tablespoons extra-virgin olive oil
1 tablespoon white wine vinegar
teaspoon Dijon mustard
teaspoon honey
teaspoon kosher salt

Directions:
Place spinach, quinoa, and chicken in 2 airtight containers. Top each salad with berries, cheese, and almonds. Cover and chill until ready to serve.
Just before serving, whisk together oil, vinegar, mustard, honey, and salt in a small bowl. Divide dressing evenly between the salads and toss to coat. Serve immediately.

Chicken Salad
Ingredients:
cup mayonnaise
cup Greek yogurt
2 teaspoons lemon juice
1 teaspoon Dijon mustard
teaspoon paprika
teaspoon garlic powder
teaspoon salt
teaspoon ground pepper
cup finely chopped chives (or any fresh tender herbs)
3 cups coarsely shredded cooked chicken breast
cup chopped celery
cup chopped shallot

Directions:
Whisk together mayonnaise, yogurt, lemon juice, mustard, paprika, garlic powder, salt, and pepper in a mixing bowl until smooth and well combined. Stir in herbs. Add chicken, celery, and shallot. Stir until evenly coated.
