DIRECTIONS
Melt coconut oil over low heat in a sauté pan. Raise heat to medium. Place peaches face down in oil and sear for 3-4 minutes until golden brown. Cook on the back side for 2-3 minutes. Lay out on a platter. Top each peace with 1/2 oz goat cheese on each half. Top with almonds and balsamic vinegar. Serve at room temperature.
