Latin Evolution

Much of the warmth has been coming from his computer laptop these days. Jose Garces, who won on TV's Iron Chef, and the chef at new Mediterranean restaurant Amada in Old City, just finished writing a book.

It is called "Latin Evolution."

We stopped by his kitchen at Amada (2nd and Chestnut Streets) so Garces could show us one of the fastest, easiest recipes in the book: a seviche uses citrus juice, not heat, to "cook" scallops. It's garnished with some luxurious twists. And Garces swears, it's not all that complex.
