Authorities said 60-year-old Frank Nastasi of Haddon Heights died of natural causes at a Vineland hospital.
He was due to be released from South Woods State Prison in nearby Bridgeton on Dec. 2.
He pleaded guilty in 2005 to vehicular homicide.
Prosecutors say he was trying to kill himself when he drove into the restaurant in Mount Ephraim at more than 100 mph on May 15, 2002.
